Description

A longtime favorite for its strong and consistent cupping scores, for the 2023/24 harvest we found a strong cup with a grade of 87, a point above our washed varietal. While our classic washed Java has set us apart for more than two decades, we have completely different methods to our anaerobic processed Java, adding an entirely new dimension.

Anaerobic Java coffee is naturally processed and dried inside the cherry, adding depth and noticeable color to the final product. When roasting the sugars caramelize and provide a wonderful cup with bright notes of dried fruit. Lighter roasts retain the depth of the fruit, while medium roasts develop the chocolate notes for a heavier, more notable body. Overall, like most Nicaragua coffees this has a moderate acidity.
