A family favorite, Javanica has been developed over the last 20+ years since it's introduction to Central America. It's since been developed extensively by the Bendaña family andsurrounding farms and is a prominent feature of El Quetzal. 

Favored for its resistance to coffee leaf rust and coffee berry disease, Java shares flavor characteristics with recent superstar, Geisha, without the intensity found in many recent and more costly and fragile coffees. Known for its caramel, honey crisp, citrus, flavors, it also retains a smooth character as it develops into a more chocolate note at a darker roast levels.

Java scores favorably year in and year out and is core to our coffee business and long term relationships with buyers. 

Java, and what it is not

The Java grown at El Quetzal is Javanica — a genuine Arabica varietal traced back to Indonesia, not a blend, a roast style, or the generic "Java" used as a synonym for coffee. It arrived in Central America relatively recently and has been developed here over more than twenty years by our family and neighbouring farms.

Why we grow it

Two reasons, one practical and one in the cup.

Practically, Javanica carries strong resistance to coffee leaf rust and coffee berry disease — the two pressures that have done most damage to Central American production in the last decade. A varietal that stays healthy through a bad year is worth a great deal on a working farm.

In the cup, it earns its place regardless. Javanica gives a clean, layered profile with floral aromatics and a syrupy body that sets it apart from the Caturra and Catuaí grown alongside it.

The plant grows tall and narrow, and it is unmistakable walking the rows at El Quetzal. Our lots are grown at altitude in volcanic soil, hand-picked at ripeness, and processed at our family's own dry mill so each lot stays traceable to its parcel.

We offer Java washed, and as an anaerobic lot for roasters looking for something more expressive — fermentation extends the fruit and adds a depth the washed version keeps deliberately clean.

Who this coffee is for

Roasters: a distinctive single origin with a story worth telling on a menu, and rare enough in Central American offerings to stand out from another Caturra.

Home brewers: excellent as a pour-over where the florals and syrupy body have room to show.
