from 60 reviewsI profiled the Nicaragua Yellow Catuai from El Quetzal Coffee as a dark roast, even though it was recommended for a medium profile, and I am glad I trusted my instincts. The darker roast brings out a bold, rich flavor with excellent body, smooth depth, and the kind of strong, satisfying character I want in a dark coffee.
I loved the finished roast so much that it became the foundation of Front Line Hero, which now headlines my coffee lineup as my number-one seller. This coffee has quickly become a customer favorite and represents everything I wanted Front Line Hero to stand for: bold flavor, strength, consistency, and purpose.
Through iHonorUSA.com, I am also actively sending Front Line Hero to deployed U.S. service members so they can enjoy a small creature comfort from home. As a veteran, being able to share one of my best coffees with the men and women serving overseas makes this roast especially meaningful to me.
I profiled the Nicaragua Washed Java from El Quetzal Coffee as a medium-light roast, and I could not have been more impressed with the results. The flavor is incredible. As soon as the beans came out of the roaster and I smelled the aroma, I knew this profile was going to work.
I now use this coffee at my café for espresso-based drinks as well as cold brew. It has a wonderful body and a rich, balanced flavor that stands up beautifully in milk-based beverages. In cold brew, the body and natural sweetness really help bring out and complement the flavors of the syrups without allowing them to overpower the coffee.
Fantastic coffee, highly recommend. Will be buying again
Such a wonderful coffee bean! Roasted it light and the carmel-apple combo sings
What a delicious bean. I ordered two 150g sample pack and roasted one six days ago, to a 13.3% moisture loss; a light to light-medium roast in my Kaleido M1 Lite. A rich, full-bodied coffee with more sweet notes of various fruits than my palate can discern. I will be ordering five pounds in the near future.
Our guests loved this and couldn't believe how smooth and tasty it was. Makes good lattes and brewed coffees. I was losing hope in Nicaraguan coffee and am happy I decided to try these.
I've enjoyed this for lattes and pour overs by itself and blended with other coffees. Best Nicaraguan coffee I've tried to date.
The very best, easiest coffee's to roast. Perfect every time. Great smooth taste.
Great bean for milk based espresso drinks! Roasted to a med-dark and has been a huge hit in our espresso drinks! We will be ordering more of these beans!!
Really enjoying this green! Been my daily driver espresso beans.
I roasted on my Kaffelogic Nano 7 with Washed profile at both 0.8 light roasting and 12.8 DTR setting and they are both great. At first I had hard time getting some of the floral notes. I tried coarse ground and faster recipe and tasted great.

Pacamara Coffee Beans: Bold Flavor, Big Personality
Some coffees whisper. Pacamara speaks in a clear, confident voice. Known for its large bean size and unforgettable flavor, Pacamara coffee beans have become a favorite among roasters and coffee enthusiasts who crave complexity, sweetness, and body in the same cup.
At El Quetzal Coffee Co., we grow Pacamara at high elevation in the Matagalpa region of Nicaragua. Our lots are small, fully traceable, and grown with meticulous care—producing a cup that is as unique as the varietal’s origin story.
What Is Pacamara?
Pacamara is a hybrid varietal developed in El Salvador in 1958, by crossing Pacas (a compact mutation of Bourbon) with Maragogipe (a naturally occurring Typica mutation known for its huge beans). The result is a cultivar that combines Pacas’s sweet, balanced character with Maragogipe’s size and depth.
Its distinct genetics give Pacamara its trademark oversized beans and its ability to produce wildly expressive cups. But it’s not an easy plant to work with—it requires careful management, selective picking, and precise processing to bring out its best qualities.
The Flavor Profile of Pacamara Coffee
Pacamara coffee beans are celebrated for their layered complexity and silky body. Expect:
- Rich chocolate and caramel sweetness
- Juicy fruit notes—often red berries, stone fruit, or tropical hints
- Balanced acidity that brightens without overpowering
- A creamy, almost velvety mouthfeel
This is a coffee that holds up beautifully across roast levels. Lighter roasts showcase fruit and florals, while medium roasts bring out sweetness and depth. It also makes a phenomenal single-origin espresso.
Why Matagalpa, Nicaragua Is Perfect for Pacamara
Pacamara thrives at higher altitudes, where slow cherry maturation leads to dense, complex flavor development. Our Pacamara grows between 1,200–1,500 meters above sea level in Matagalpa, a region defined by:
- Volcanic soil rich in nutrients
- Steady rainfall and consistent cloud cover
- Significant day-to-night temperature swings for optimal sugar and acid balance
The combination of terroir and our farm’s shade-grown practices creates an ideal environment for Pacamara to express itself fully.
Our Approach to Pacamara
Every step of our Pacamara production is intentional:
- Shade-grown under diverse native canopy for biodiversity and soil health
- Nourished with house-made vermicompost to naturally replenish nutrients
- Hand-harvested at peak ripeness for uniform flavor development
- Fully washed and processed on-farm, giving us full control over fermentation and drying
These practices ensure our Pacamara is clean, sweet, and expressive in every batch.
For Roasters: Why Pacamara Belongs on Your Menu
Pacamara offers a unique combination of approachability and intrigue—making it perfect for customers who want something familiar yet different. It’s ideal for:
- Seasonal single-origin releases
- Competition and cupping showcases
- Espresso programs looking for depth and versatility
For Enthusiasts: A Cup That Delivers
If you’re a home brewer, Pacamara is a joy to work with. Its large beans and balance of sweetness, body, and fruit make it forgiving and rewarding across brew methods—whether you’re pulling shots, brewing pour-overs, or making a rich French press.
Final Thoughts: Big Beans, Big Flavor
Pacamara isn’t just a novelty varietal—it’s a high-performing, flavor-packed coffee that rewards careful farming and roasting. In the right conditions, it produces cups that can compete with the most celebrated varietals in the world.
At El Quetzal, our Pacamara lots are limited, traceable, and grown with the same care we apply to all our microlots—because we believe this coffee deserves nothing less.
