Description

Our Anerobic Java has been a hit with out longtime buyerrs and we plan to increase production to match. While our classic washed Java has set us apart for more than two decades new methods we have found that our anerobic processed Java adds an entirely new dimension. 

Origin

This coffee is entirely single-source, farm-level reserve, Strictly High Grown coffee, sourced from our flagship, El Quetzal Estate in the Department of Matagalpa.

Cupping Notes:

A longtime favorite for it's strong and consistent cupping scores, for the 2023/24 harvest we found a strong cup with our own grade of 86, a point above our washed varietal. 

Roasting Notes:

Lighter roasts retain the depth of the fruit while medium roasts develop the chocolate notes for a notable body. Overall, like most Nicaragua coffees this has a low acidity. 

Process

This coffee is naturally processed and dried in the cherry which adds a depth and noticeable color to the final product.
