Description

We've been producing Java green coffee in Nicaragua for decades with most of the supply going direct to our long term buyers in Japan. Now we're making this coffee available directly to buyers in the US, UK, and Europe. This coffee leans towards floral. jasmine, sometimes earthy characteristics you may find in Indonesian coffees but the cup is also clean and has a balance of flavors that make this a core offering in our lineup. Our coffees and management of our Java and long term partners in Tokyo have pushed this coffee into a variety of processing methods such as our anaerobic Java.

We're currently constructing beds and facilities onsite to expand this offering to test honey's and a variety of methods. Contact us for more information about out 2026 crop.

Roaster Notes: This coffee handles heat and the large beans tend to push some small roasters when trying to achieve a short roasting time for light roasts. Our roasters and buyers love the challenge and adjust towards higher drop temps on Loring's and on our sample roaster we run an aggressive curve that allows sufficient development time. 

One of the strengths of this coffee if you can create multiple presentations and find that it highlights everything from Jasmine and a very delicate cup on the light end all the way to rich chocolates and apple when roasted towards the medium or even espresso roasts where the carmelization and development is allowed to shine through.

Origin

This coffee is entirely single-source, farm-level reserve, Strictly High Grown coffee, sourced from our flagship, El Quetzal Estate in the Department of Matagalpa.

Cupping Notes:

A longtime favorite for it's strong and consistent cupping scores, for the 2023/24 harvest we found a strong cup with our own grade of 85. In 2026, our crop has improved, scoring an 86. 

Roasting Notes:

Lighter roasts retain the depth of the fruit while medium roasts develop the chocolate notes for a notable body. Our java green coffees are able to stand up to a lot of heat and the large bean size are less prone to tipping than a maracaturra or similar varietals.

Process

Our java green coffee is washed at our wet mill at the farm and then brought to our dry mill outside the town of Matagalpa, Beneficio San Miguel.

This coffee is the foundation for a number of our blends as well as our Classic Java and Modern Javanica single varietals coffees.
