A longtime favorite for its strong and consistent cupping scores, for the 2024/25 harvest we found a strong cup with a grade of 87, a full point above our traditional washed varietal. While our classic washed Java has set us apart for more than two decades, we have completely different methods to our anaerobic processed Java, adding an entirely new dimension.

Our Anaerobic Java is a masterclass in controlled fermentation, where oxygen-free environments allow the bean’s natural sugars to transform into a profile of intense complexity. Sourced directly from our family estate, this lot represents the intersection of Nicaraguan heritage and experimental science. We monitor every degree of temperature to ensure the sugars in the coffee cherry transform into sparkling tropical fruit, red wine, and creamy cocoa.

If you love the clarity of a washed coffee but crave the "funk" and body of a Natural, this oxygen-free process offers the best of both worlds: a silky mouthfeel with a clean, vibrant finish.
