Description

Our Catimor green coffee is an 84-85 pt coffee that adds a nice fruity, nuttiness to the cup. Catimor is a component of our strictly high grown blend and is responsible for the sweetness and highlights of the cup. Offering this coffee as a single varietal lot allows for an exceptional cup on it's own as well as a great blender coffee to add sweetness and  a range of fruity to buttery tasting notes.  We combine this with our catimor to add body and bitterness for a traditional medium to dark roast coffees. For lighter to medium espressos the Catimor green coffee creates a nice foundation for other highlights form natural or anaerobic coffees.

  • Tasting Notes: Notes of apple, blueberry, vanilla, yellow plum, hazelnut, walnut, dulce de leche and chocolate.

Roaster Tips:

  • Catimor is a core component of our SHG blends we use in our modern espresso. Being a hybrid with some robusta characteristics we find it develops well with a later first crack (after 8:30) and a longer DTR when compared to our more delicate Geisha or other microlots.

Catimor Coffee Origins:

Catimor is a hybrid of Caturra x Timor Hybrid 1343. This coffee is resistant to coffee leaf rust and coffee berry disease. It produces a high yield and good cup quality under the proper conditions as we find on El Quetzal. Catimor green coffee has become a staple on our farm and our strictly high grown blend is sought out for local roasters and family alike.
