Our Anaerobic Java green coffee has been a hit with our longtime green buyers, and we plan to increase 2027 production to match. While our classic washed Java has set us apart for more than two decades, we have found that our anaerobic processed Java adds an entirely new dimension.
This coffee is entirely single-source, farm-level reserve, Strictly High Grown coffee, sourced from our flagship, El Quetzal Estate in the Department of Matagalpa, Nicaragua.

Roasting Notes:
This lot is best expressed through a light roast, which highlights the bright, clean acidity characteristic of high-altitude Nicaraguan coffees. By carefully managing the development time, we retain the integrity of the anaerobic fruit notes; however, those seeking a more traditional profile will find that a medium roast transforms these sugars into a rich, chocolatey body.
Process & Beyond
This Java lot undergoes a precise anaerobic fermentation, where the cherries are sealed in oxygen-free tanks to intensify their natural sugars. By combining this controlled environment with traditional natural processing, we achieve a profile defined by deep complexity, vibrant acidity, and a strikingly rich color in the final cup.
