At first light in Matagalpa, the Javanica variety stands tall and narrow, its bronze-tipped leaves catching the morning chill. The trees look different from everyday coffee workhorses — more upright, more deliberate in their structure. They carry genetic gifts from their journey across three continents: natural tolerance to coffee-berry disease, strength in highland climates, and the ability to thrive with fewer fertilizer inputs than many modern hybrid varieties.
How Java Grows at El Quetzal
At 1,200+ meters above sea level, our Java trees grow beneath broad plantain leaves — natural shade that protects cherries from direct sun and enriches the soil with potassium. This layered agroforestry system strengthens farm resilience while slowing cherry maturation, which deepens sweetness and complexity in the cup.
Java takes three full years to yield its first cherries. Each harvest season expands our crew from 50 year-round staff to approximately 300 seasonal pickers, who move through the rows selecting only the ripest cherries by hand. No mechanical harvesting, no strip-picking — every cherry is a deliberate choice.
What Does Java Look Like as a Plant?
Java's journey begins in Ethiopia, the birthplace of all Arabica coffee. In the 1800s, Dutch traders carried it to Indonesia, where the variety took on its famous name. Later, researchers in Cameroon discovered its natural tolerance to coffee-berry disease. In 1991, the variety arrived in Central America — and Dr. Frank Bendaña ("Don Paco"), Nicaragua's first Ph.D. agronomist and founder of Finca El Quetzal, recognized its potential immediately. He planted Java on volcanic hillsides in Matagalpa long before most growers knew the name, betting on a varietal that would prove both resilient and refined.
Today, three decades later, those original plantings have matured into one of Nicaragua's most respected Java programs.

Honey Process Java — The Sweet Middle Ground By leaving a specific amount of the coffee cherry’s "mucilage" on the bean during drying, we create a cup defined by heightened sweetness and a creamy mouthfeel. Natural Java — Fruit-Forward & Full-Bodied Fuller body, deeper fruit notes, and a rich chocolate finish. These cherries are sun-dried whole on our raised drying beds in the Matagalpa breeze, allowing the bean to absorb the maximum sweetness from the fruit.
